Orange Cranberry Flax Bran Muffins

Morning muffins with a twist!

Ingredients:

1/2 cup oat bran
1 cup Patrick Henrys whole-wheat flour
3/4 cup ground flax seed
1 cup wheat bran
1 cup Byrd Mill light peanut flour (12%)
1t baking powder
1/2 t salt
2 whole oranges, in 8ths, with the peel on
1/2 cup brown sugar
1 1/4 buttermilk (or 1 cup milk + 1t of lemon juice)
1/4 cooking oil
3 eggs
1t baking soda
1 1/5 cups orange flavored cranberries

Directions

1. Makes 24 normal-sized muffins, preheat oven to 375. Combine dry ingredients in a mixing bowl and set aside. In a blender combine orange wedges, brown sugar, buttermilk, oil, eggs, baking soda, and cranberries. Blend well to make sure the orange pieces are small. Pour contents of blender into a bowl and mix with dry ingrendients. Fill paper miffin liners nearly to the top. Bake 20-25 mintues, until toothpick comes out clean.
